Kung Pao Chicken
Kung Pao Chicken
Ingredients:
500g boneless chicken breast or thighs, diced
1/2 cup roasted peanuts
1/2 cup diced bell peppers (red and green)
2-3 dried red chilies, cut into halves (adjust for spiciness)
3 green onions, sliced
3 garlic cloves, minced
1 tsp ginger, minced
For the Marinade:
1 tbsp soy sauce
1 tbsp Chinese rice wine (or dry sherry)
2 tsp cornstarch
For the Sauce:
2 tbsp soy sauce
1 tbsp hoisin sauce
1 tbsp Chinese rice wine (or dry sherry)
1 tsp sesame oil
1 tsp sugar
1 tsp cornstarch
2 tsp water
Instructions:
Marinate the Chicken: Mix the marinade ingredients in a bowl. Add the diced chicken, ensuring each piece is well-coated. Let it marinate for 20 minutes.
Prepare the Sauce: In a separate bowl, mix together all the sauce ingredients until smooth. Set aside.
Cooking Process:
a. Heat the Wok: In a wok or large frying pan, heat 2 tablespoons of oil over medium-high heat (around 180°C or 350°F).
b. Cook Chicken: Add the marinated chicken pieces and stir-fry until they turn white (approximately 3-4 minutes). Remove the chicken and set aside.
c. Stir-fry Veggies: In the same wok, add a bit more oil if needed. Add the dried red chilies, minced garlic, and ginger. Stir-fry for about 30 seconds or until aromatic. Then, add the bell peppers and stir-fry for another 2 minutes.
d. Add Chicken and Sauce: Return the cooked chicken to the wok. Pour in the prepared sauce and mix well, ensuring everything is well-coated.
e. Final Touches: Add the roasted peanuts and sliced green onions. Give everything a quick mix.
Serve: Once everything is heated through and the sauce has thickened slightly, transfer to a serving dish. Best enjoyed with steamed rice.
Tips:
Always adjust the amount of dried red chilies according to your preference for spiciness.
Authentic Kung Pao Chicken uses Szechuan peppercorns for a unique numbing sensation, but this ingredient can be omitted if not readily available.
