Ingredients:
1 cup fine bulgur (cracked wheat)
2 cups boiling water
3 large tomatoes, finely diced
2 cucumbers, finely diced
2 bunches fresh flat-leaf parsley, finely chopped
1 bunch fresh mint, finely chopped
4 green onions, finely sliced
1/3 cup extra virgin olive oil
3-4 lemons, juiced (adjust to taste)
Salt, to taste
Freshly ground black pepper, to taste
Instructions:
Prepare the Bulgur: In a large bowl, pour boiling water over the bulgur. Cover and let it sit for about 30 minutes until it softens. Once it's soft, drain any excess water using a sieve or fine mesh strainer.
Mix Vegetables: In a separate large bowl, combine the finely diced tomatoes, cucumbers, sliced green onions, chopped parsley, and mint.
Combine: Add the soaked bulgur to the vegetable mixture.
Season: Drizzle with olive oil and add lemon juice. Toss well to ensure everything is mixed thoroughly. Season with salt and pepper according to your taste.
Chill & Serve: For best results, refrigerate for an hour before serving. This allows the flavors to meld. Serve your Tabbouleh chilled as a refreshing side dish or main salad.
