Ingredients:

  1. 1 cup fine bulgur (cracked wheat)

  2. 2 cups boiling water

  3. 3 large tomatoes, finely diced

  6. 1 bunch fresh mint, finely chopped

  7. 4 green onions, finely sliced

Instructions:

  1. Prepare the Bulgur: In a large bowl, pour boiling water over the bulgur. Cover and let it sit for about 30 minutes until it softens. Once it's soft, drain any excess water using a sieve or fine mesh strainer.

  2. Mix Vegetables: In a separate large bowl, combine the finely diced tomatoes, cucumbers, sliced green onions, chopped parsley, and mint.

  3. Combine: Add the soaked bulgur to the vegetable mixture.

  4. Season: Drizzle with olive oil and add lemon juice. Toss well to ensure everything is mixed thoroughly. Season with salt and pepper according to your taste.
