Peshawari Namkeen Gosht
Ingredients:
500g mutton or lamb (preferably with bone for flavor)
1/2 cup ghee or oil
2-3 green chilies, sliced
3-4 garlic cloves, crushed
1 tsp ginger, crushed
Salt, to taste
1/2 tsp black pepper
1/2 cup yogurt, whipped
6 Whole Tomatoes
2 cups water (or as needed)
Fresh coriander, chopped (for garnish)
Ginger slices (for garnish)
Instructions:
Meat Preparation: Clean and cut the mutton or lamb into medium-sized pieces.
Cooking Process:
a. Heat the Ghee: Heat the ghee or oil over medium heat in a large pot or wok.
b. Sauté Garlic and Ginger: Add the crushed garlic and ginger to the hot ghee. Sauté for a minute or until they release their aroma.
c. Add Meat: Add the meat to the pot and fry on high heat until the meat changes color and seals.
d. Add Yogurt: Reduce the heat to medium and add whipped yogurt. Stir continuously until the yogurt is well mixed with the meat and starts to simmer.
e. Add Green chilies: green chilies and black pepper. Mix well.
f. Add Peeled cut or whole tomatoes: Add over the mixed meat in the pot and cover with lid on very low heat
g. Cook: Cover the pot and cook on low heat for 1.5 to 2 hours. Occasionally, check and stir to ensure the meat doesn't stick to the bottom. Add water if needed. Cook until the meat is tender and the water has reduced, leaving just the ghee and the tender meat.
Garnish and Serve: Transfer the cooked meat to a serving dish. Garnish with fresh coriander and ginger slices. Peshawari Namkeen Gosht is traditionally served with naan or tandoori roti.
Tips:
Using meat with bone enhances the flavor.
Cooking on low heat for an extended period ensures the meat absorbs the flavors and becomes tender.
Though meat releases its salt with a low heat process in cooking, if you want to add salt, add it at the end.
Adjust the green chilies according to your preference for spiciness.
